Ingredients Preparation Time: 1 hr 30 min

  • 1 cup white sugar
  • 1/2 cup raisins
  • 1/2 tsp lemon extract & cardamom flavored extract
  • 3/4cup butter & milk
  • 2 eggs & tsp baking powder
  • 2-1/2 all purpose flour

Method

  • Cooking method is quite easy. Once you have collected all ingredients, it will hardly take 60 to 65 minutes to prepare the cake.
  • First, cream the butter and the sugar until get fluffy and light.
  • Add the eggs separately into the bowl and beat them properly.
  • Pour lemon and cardamom flavoring into the bowl.
  • Pour the milk and keep stirring.
  • Make sure that the entire ingredient has mixed well.
  • Now, add the flour and the baking powder into the bowl and stir the mixture.
  • Don’t forget to add the raisins as they will a kind of new flavor to your cake.
  • Preheat the oven to 175 degree and in a cake pan pour the mixture to keep it in the heated oven for 60 minutes.

Nigella’s Quick Christmas Chocolate Cake

You have heard many times about Nigella, the famous English food writer and a beautiful diva. She enjoys cooking a wide variety of food and love to share them. Here is a simple cake recipe from Nigella’s cooking diary.

Ingredients:-

  • 345g to 350g Chopped Dried Soft Prunes
  • 200g to 250g Raisins
  • 20g to 25g Currants
  • 120ml to 125ml Tia Maria or similar favourite
  • 170ml to 175ml honey
  • 2 oranges zest & juiced
  • 2 tablespoons good quality cocoa
  • 1 tsp mixed spice
  • 175g softened unsalted butter & Dark Muscovado Sugar
  • 3 eggs beaten
  • 150g plain flour
  • 75g ground almonds
  • 1/2 tsp Baking Powder & baking Soda

Christmas Chocolate Cake

Method :-

  • Preheat the oven for 300 degrees F or 150 degrees C for around 2 hours.
  • Meanwhile, Take a pan to boil chopped dried soft prunes, raisins, currants, honey, 2 tablespoons cocoa, 1 tsp mixed spice, 175g unsalted butter, juice of 2 oranges, Tia Maria and dark Muscovado sugar. Stir the mixture properly for 10 minutes on medium heat.
  • Remove the saucepan from the heat and leave it to stand for 30 minutes.
  • After 30 minutes when the mixture will cool down, add the flour, eggs, ground almonds, baking soda and powder, mix well with a spatula until the ingredient s have combined.

Delicious Cake

  • Now, carefully pour the mixture into the lined cake tin. Cover the tin with a disk of greaseproof paper; it saves the top and the edge of the cake from burning even further.
  • Bake for around 2 hours until the cake is firm. You can insert a knife into the middle of the cake to check it is cooked or not.
  • If the knife comes out easily, it means the cake is ready to serve.
  • Decorate the cake with the Christmas icing or the way you want.
